We opened in 1998 and our ethical business ideals remain the same today: we serve delicious organic food and drink carefully sourced from independent producers, while keeping our environmental impact and food miles super-low. In fact, over 90% of our fresh fruit and veg comes from organic farms in the South East of England and East Anglia. We change our menu daily according to what's available – if something isn't in season, you won't find it on the menu.
Everything we sell is of superb quality and produced only from organic or wild ingredients – from our home-baked bread and homemade pickles to hearty game pies, fish with wild samphire or foraged mushrooms on toast. Our meat comes from small farms where the highest standards of animal welfare are respected and our game is genuinely wild. Our wild sea fish comes from small, inshore fishing fleets that have been scientifically monitored for the sustainability of their methods. We can even tell you the name of the boat and the skipper who caught you fish supper. And we also serve sustainable, local Marine Stewardship Council (MSC) certified fish whenever possible. We are obsessed with having the lowest carbon footprint possible: we re-use and recycle wherever possible, and we chose our electricity supplier because they invest more per customer in renewable energy sources than any other.
